  • Coupons Galore!

    Here's my new "thing" of the year....couponing!  Yes, I have become a cheesy coupon mom.  I know many, many women who have mastered this art and I'm doing my best to learn, but I'm not quite there yet. Basically, coupons, by themselves, don't really save much.  But, when you start saving and organizing coupons, then combine them with store specials, then you can save some serious money!!  Our grocery budget used to be about $110 for enough food to feed our family for an entire week.  My goal is to cut that in half--$55 per week.  I could probably go even lower than that, but we'd have to start eating a lot of canned and boxed food, which is full of junk. Last week, I spent roughly $70, which is a step in the right direction. Anyway, if you have always been interested in saving money with coupons, but don't know where to start, here is a list of suggestions:


    1. Get your Sunday newspaper.  Open it up and look for coupons books labeled "RedPlum," "SmartSource," and "PC&G (I think??)."  Cut out any coupons that you are even remotely interested in.
    2. Buy a plastic bin large enough to store a year's worth of coupons. In mine, I have index cards that divide my coupons alphabetically, a pair of scissors, a small notepad for lists, and a pen. You don't have to worry about doing anything with these coupons yet, just start organizing a good supply.
    3. Get "savings" cards from every store in your area. I have cards for Kroger, Food City, CVS, Food Lion, and Ingles. This, alone, can save you big money.
    4. Spend an hour or so per week planning out a menu for that week. Make a list of what you will need and do not stray from it at the store.
    5. Read this blog EVERY day: www.moneysavingmom.com . It will help you begin to match up the store specials with your coupons. Crystal, the author, also has several sources to help you get started
    6. Eventually, your goals will be to pay close attention to store specials, match up coupons to every possible deal, plan your menu based on the deals, and be able plan ahead enough to buy things in bulk when they are on sale to save additional money. I'm not to this level yet, but I'm working on it. Also, you can also get more than one Sunday newspaper to clip additional coupons. My dad, who is a circulation manager for Arkansas' Newspaper, the Democrat Gazette, is (or should be) saving all the extra papers he gets on Sundays so that he can donate the inserts to me. Thanks, Dad!!
    So, there you go! This has become really fun--sort of like a game for me.  I'll let you all know how I'm doing with it. Those of you out there who are already coupon kings and queens, can you share your wisdom? Please.....enlighten us!

    Also, thanks for the nice responses to my "Low Blogging Self-Esteem" post! I want to make perfectly clear that I don't keep tabs on every person who comments and I don't expect every reader to comment on every post--though that would be nice :).  I just hate seeing 0 comments.  But, I am curious....some of you out there get 20 and 30 comments on every post....HOW IS THIS POSSIBLE???  Is there some sort of "secret blogging society" that you sign up to be apart of to get all those responses?  I don't even think I know 20 people who LIKE me, much less who want to comment on my blog!

  • Low Blogging Self Esteem

    I think some serious finger-wagging is in order.  I'm quite disappointed because you guys have all been major comment slackers lately!! I mean, I'm not asking much...just a little acknowledgment that people are reading this blog. Yes, I know, it's summer and all.  Being the very important people that you are, I know you are all very busy. I, on the other hand, am not important--I'm a little bit of a dork with no life, so comments on my blog are a ray of sunshine! For those of you who comment on this blog often, THANK YOU! As for the rest of you, maybe I should start getting more controversial here.  Maybe I'll start up a few posts on religion and politics to get the comment ball rolling. Better yet, I'll do what my brother does--I'll play Devil's Advocate on big issues. I don't know--I guess I'll have to get more creative.

    So, I'm asking you....what would like to see more of/less of on this blog? Let's hear it!

  • Random Tidbits

    Hey, Friends! It's been awhile since I've posted some of my random thoughts.  Fortunately for you (or unfortunately, depending on what you think of me), many thoughts have been swirling around in my crazy mind, so read at your own risk. 

    1. Knoxville Church Shootings:  Many of you have probably heard of the big shooting that took place at one of the many churches here in Knoxville.  It was so tragic!  As with everything, everyone has something to say about this. Everyone wants to blame somebody--usually somebody or something other than the actual shooter. Many people blame this on the influence of people like Sean Hannity, Rush Limbaugh, and the like because the shooter happened to own some of their books.  Others blame the so-called lack of gun control in this area.  My favorite group, by far, has to be the loudmouthed groups of Christians who feel its THEIR job to remind everyone that this particular church target was not a Christian church.  This is usually the same group of people who love labeling events like 9/11 and Hurricane Katrina as God's punishment to homosexuals.  Come on, People, are you serious?  I'm not saying that this particular church is right in what they believe, or that God doesn't use some natural and other disasters to get a message across.  But, what possible good do comments like this accomplish?  Do you just want to feel warm and cozy and better about yourself?  Good grief! What gets me more than anything is that these people love getting on tv, the radio, and the internet to spread their messages of pride and ignorance.  Heaven forbid we have compassion in times like these.  We wouldn't dare want to live out The Great Commission here.  God help us all!

    2. Speaking of Christianity, I have been reading C.S. Lewis' "Mere Christianity" for the first time this past week.  Lewis is one of those authors that I've always been reluctant to read because there is so much "hype" built up around him, especially among Christians. I feel the same way about Beth Moore, James Dobson, and Max Lucado, among others.  Hype usually equals mediocrity (at best), in my opinion. But, not in this case. This book is one of the most wonderful, enjoyable reads I've had in ages! Lewis is such an incredible writer who has an uncanny ability to explain very complicated thoughts in simple and straightforward ways.  Here's an example: In chapter 3 of the book, Lewis addresses those who question the divinity of Jesus.  The whole chapter is great, but this part sums it all up...                                                                                                        
    I am trying here to prevent anyone saying the really foolish thing that people often say about Him: "I'm ready to accept Jesus as a great moral teacher, but I don't accept His claim to be God." That is the one thing we must not say. A man who was merely a man and said the sort of things Jesus said would not be a great moral teacher. He would either be a lunatic--on a level with the man who says he is a poached egg--or else he would be the Devil of Hell. You must make your choice. Either this man was, and is, the Son of God: or else a madman or something worse. You can shut Him up for a fool, you can spit at Him and kill Him as a demon; or you can fall at His feet and call Him Lord and God. But let us not come with any patronising nonsense about His being a great human teacher. He has not left that open to us. He did not intend to.

    Read it!! It's so good.

    3. On a much lighter note, I am loving my job! I still work at our local gym with a few clients, but I have also started training on my own.  I bought a bunch of portable equipment and I've had some business cards printed out to give to prospective clients.  Basically, what I do is go to my clients' homes and customize a diet and exercise program just for them. Each 1 hour session can be done inside or outside, whichever the client prefers.  It's a great way to help others make physical activity apart of their daily lives.  So, Knoxville Ladies, if you or anyone you know would like to schedule a free session with me, you can contact me through Xanga or my business email:  ptwithkatie@myway.com

    4. Have I mentioned you guys before how much I love my sweet Mitch?  Maybe I have, but I just have to restate how blessed I am to be able to laugh with him every day!  You might think you are in love with your spouse, but, really you have no idea how much better I have it!! ;)

    5. And I can't make a list without talking about food....Here's, yet, another fabulous vegan recipe:


    Dill Gazpacho

    • 5 tomatoes (if you live in E. Tenn., get Grainger County Tomatoes--they are the best), chopped
    • 1 large cucumber, chopped
    • 1 onion, chopped
    • 1 green pepper, chopped
    • a few spinach leaves
    • 2 cloves of garlic
    • 2 tablespoons of olive oil
    • 2 tablespoons of balsalmic vinegar
    • 1/4 cup fresh dill
    • juice from 1 lemon
    • salt and pepper to taste
    Combine all ingredients (raw) in a food processor or blender.  Blend for 1-2 minutes on medium speed. Place in a serving bowl, cover, and refrigerate for awhile, so the flavors will really soak in! Serve cold!

  • Learning by Watching

    We've had a lot of rain this past week here in East Tennessee.  We really needed the rain, but the downside was that the kids started getting "cabin fever" when it rained for a few days in a row. One afternoon, I decided to take them out to our awesome front porch to play during a thunderstorm.  They loved the sound of the thunder and were being so cute, so I took out my trusty video camera and taped a little bit of their cuteness.  What started out as cute turned into another "thunderstorm" of arguing on our front porch. I'm always on the lookout for creative ways to teach my children natural (logical) consequences (good and bad) to their actions. I just kept filming the situation while trying to correct them. Here's what I filmed (take note...Molly is dressed up in her new princess dress--what is on her head is her pink "hair")


    I stopped filming and called them over to me to watch the video.  Their little eyes were glued to the camera--watching intensely!  I asked them if they were acting kind in the video or selfish.  "SELFISH!" said a trio of tiny voices.  I asked, "What does kindness look like?  Can you show me?"  So, they all ran back to their little "set" and I started filming again. Here's what I got:


    Let me just say that this was a GREAT teaching tool!!  I've been filming my kids in several situations since the porch scene and they've learned a lot, I think. Sometimes it takes seeing our own foolishness before our eyes before we learn how foolish we are!  Maybe I should have someone start following ME around with a video camera all day. :)

  • Camping Trip

    Last Friday, we made a brave trip out to Wartburg, TN to go camping! It actually turned out to be a great trip! We expected our 3 kids to whine and complain the entire time, but they didn't--they LOVED camping! Here is a slideshow of our fun trip:

  • Slow Internet

    I have a problem and I'm about to lose my mind!!! My internet is soooooooooo slow and I don't know why. Each page takes at least 2 minutes to load. I've defragmented as best I can, I've run a virus scan and nothing was found. I've cleaned out my hard drive. The only thing I can think of is that I recently changed from Internet Explorer to Firefox--could this be the problem? Does anyone have any other suggestions? I need help!!
